The working principle of the egg cooking and shelling processing line
Choose fresh eggs with a pH above 9.2 (low pH will affect the breakage rate of the eggs). The eggs are lifted by the water tank and transported to the egg washing machine. The washed eggs are transported to the light inspection equipment. (Pick out spoiled eggs manually). The light-inspected eggs are transported to the puncture machine, and the large end of the egg is punctured.
The punctured eggs are transported to the pre-cooking machine, and the eggs are rotated 360 degrees on the conveyor of the pre-cooking machine, so that the yolk is controlled in the egg, thereby reducing the egg breakage rate. The pre-boiled eggs are conveyed to the egg-boiler tank through the conveying device, and the water temperature of the egg-boiler is controlled at about 98°C.
After 30 minutes of steaming in the egg cooker, the eggs are lifted and transported to the cooling tank. The water temperature of the cooling tank is controlled below 7°C. There is a lifting conveyor belt in the cooling tank, and the elevator conveys the eggs to the egg sheller. The egg sheller uses the rubbing method to peel off the eggshell and drop it into the quality control conveyor belt. The operator sorts the eggs on the quality control conveyor belt.
